Rhubarb is a vegetable that doesn't always win everyone over due to its acidity and fibrous texture. However, it can be used to prepare delicious desserts such as rhubarb almond tart. We offer you to discover this easy and tasty recipe that may make you appreciate this unpopular ingredient.
Ingredients
Here are the necessary ingredients to prepare a rhubarb almond tart for 6 people:
500g of fresh or frozen rhubarb
1 roll of shortcrust pastry
2 eggs
125g of almond powder
110g of sugar
1 sachet of vanilla sugar
1 tablespoon of fresh or vegetable cream
Note: From a botanical point of view, rhubarb is a vegetable, even though its tangy taste lends itself well to dessert preparation. It is traditionally incorporated into sweet preparations such as pies, jams, and sorbets because sugar helps to reduce the acidity of this plant. In cooking, only the petioles of the leaves are used.
Preparing rhubarb
The first step in making a rhubarb almond tart is to prepare small pieces of rhubarb.
If using fresh rhubarb, wash the stalks and peel off any strings, then cut the resulting sticks into 1 cm pieces.
If using frozen rhubarb, let it thaw completely and then cut the pieces into small cubes of 1 cm each.
Preparation of almond cream.
The almond cream used to garnish this rhubarb almond tart is simple and quick to prepare. It is lighter than frangipane because it does not contain butter.
1- Whisk whole eggs with sugar and vanilla sugar.
2- Add a spoonful of fresh cream, then almond powder and mix well.
Note: To prepare this cream in a vegan version, I recommend using Almond cuisine or, failing that, Oat cuisine with a more neutral taste.
You should obtain a slightly granular but homogeneous almond cream.
Assemblage of the pie.
1- Unroll the shortcrust pastry in a pie dish, keeping the baking paper.
2- Prick the base of the pastry and mark the edges with a fork.
3- Spread the pieces of rhubarb evenly over the pastry base, as shown in the photo below.
4- Finally, cover the rhubarb with almond cream, spreading it as evenly as possible with a fork or a flexible silicone spatula.
Baking the pie.
1- Preheat your oven to 180°C.
2- Bake the rhubarb almond tart for 30 minutes until it turns a beautiful golden color.
Tasting tips
Let the almond and rhubarb tart cool completely before serving.
In this recipe, the almond cream compensates for the natural acidity of the rhubarb.
To further sweeten this dessert, I recommend serving it with a light and airy whipped cream.
