Here are the necessary ingredients to make an almond cake for 6 people:
1 plain yogurt.
100 g of sugar.
50 g of almond powder.
75 g of flour.
1 packet of baking powder.
2 eggs.
1 to 2 teaspoons of bitter almond extract.
the zest of half an organic orange.
50 g of flaked almonds.
The almond cake is made in the same way as a simple yogurt cake.
1- Pour the plain yogurt into a mixing bowl.
2- Add the sugar and almond powder.
3- Mix the baking powder with the flour and incorporate them into the mixture, alternating with the whole eggs.
The secret of this almond cake lies in the flavors added to the dough.
1- Add 1 to 2 teaspoons of bitter almond extract and mix well.
2- Wash the organic or untreated orange.
3- Grate half of its zest using a microplane or another small grater.
Adding orange zest is a tip to know for enhancing the scent of almond cakes.
1- Preheat the oven to 180°C (356°F).
2- Pour the batter into a small buttered mold. Preferably use a square or rectangular mold to be able to cut the cake into squares.
3- Bake the almond cake for 25 to 30 minutes.
4- After 10 minutes of baking, remove the cake from the oven and sprinkle it with slivered almonds before continuing to bake. The cake batter is still liquid but the almonds will not fall to the bottom of the mold.
5- Check the baking by inserting a knife into the center of the cake: the blade should come out clean.
