Blackberry Almond Tart: An Easy Recipe

Blackberry is a summer fruit that is typically used to make jams and jellies. However, if your harvest is modest and does not allow you to prepare a large batch of jam, you can also make a delicious tart with these wild fruits. We invite you to discover the recipe for almond blackberry tart.

Ingredients

Here are the necessary ingredients to prepare a blackberry almond tart for 6 people:

Approximately 400g of blackberries
1 roll of shortcrust pastry
2 eggs
125g of almond powder
100g of sugar
1 packet of vanilla sugar
3 tablespoons of fresh or plant-based cream

Note: To prepare the almond cream in a plant-based version, you can use either soy or oat cooking cream. However, the best option is plant-based cream made from almonds or amandina as it enhances the almond flavor of the almond cream.

Preparation of blackberries

The first step in preparing a blackberry almond tart is to sort the fruits.

Indeed, whether you picked them in your garden or in the wild, these berries sometimes still have their prickly stems. They can also be partially dried or mixed with dry leaves that need to be removed, of course.

Wild blackberries are smaller and rounder than cultivated varieties grown for their large sweet fruits. They are not the fruits of a tree but of a bramble! It is a thorny and invasive bush called Rubus fruticosus in botany.

1- Sort the blackberries to keep only the intact berries.

2- Rinse them quickly under a stream of cold water.

3- Drain them in a sieve as shown in the photo below.

Preparation of almond cream

The almond cream used to garnish this blackberry almond tart is rather simple and quick to prepare. It is lighter than a classic frangipane because it does not contain butter.

1- Whisk the whole eggs with the sugar and vanilla sugar.

2- Add the fresh cream (or its vegetable equivalent) and mix well.

3- Incorporate the almond powder last. You should obtain a slightly granular but homogeneous almond cream.

Pie assembly

1- Unroll the shortcrust pastry in a tart tin, keeping the baking paper.

2- Prick the base of the tart and mark the edges with a fork.

3- Spread the blackberries on the pastry to form an even layer, as shown in the photo below.

4- Cover the fruits with the almond cream, spreading it as evenly as possible using a fork or a flexible silicone spatula.

Baking the pie

1- Preheat your oven to 180°C.

2- Bake the blackberry almond tart for 30 minutes until it turns a beautiful golden color.

3- Let it cool before serving.
