Cabbage Stew: A Traditional Recipe

Cabbage stew is an authentic recipe that is part of the heritage of several French regions. This winter dish is a complete and balanced meal made with green cabbage and charcuterie.

Ingredients

Here are the ingredients needed to prepare cabbage stew for 4 people:

- one green cabbage
- 800 g of medium potatoes
- 250 g of carrots
- 4 Perugian sausages
- 200 g of smoked bacon
- a bouquet garni
- salt

Note: you can also add 250 g of turnips to this recipe if you like them.

Preparation

1) Peel and wash the cabbage. Cut it into 4 pieces and blanch it in boiling water. Drain and set aside.
Note: This step is optional but helps make the cabbage stew more digestible.

2) Peel the carrots and turnips and cut them into pieces. Peel the potatoes and leave them whole.

3) In a pressure cooker, bring 3 to 4 liters of water to a boil. Add the smoked bacon, sausages, cabbage quarters, carrots, turnips, and bouquet garni. Salt moderately. The water should cover all the ingredients.

Cooking

The total cooking time for the cabbage stew is 50 minutes.

1) Close the pressure cooker and let it cook for 40 minutes from the time the valve starts to rotate.

2) Open the pressure cooker to add the peeled potatoes. Close it again and let it cook for another 10 minutes.

Serve hot. You can present the drained ingredients or serve them with their broth.
