A must-have dessert during cherry season, clafoutis is a true delight. However, this traditional cake is not very complicated to make. I’m going to reveal my favorite clafoutis recipe for an unbeatable result.
A must-have dessert during cherry season, clafoutis is a true delight. However, this traditional cake is not very complicated to make. I’m going to reveal my favorite clafoutis recipe for an unbeatable result.
Here are the ingredients needed to prepare a cherry clafoutis for 4 people:
500 g of cherries.
4 eggs.
5 tablespoons of sugar.
1 pinch of salt.
30 g of melted butter + 30 g for finishing.
5 tablespoons of flour.
25 cl of milk.
1 packet of vanilla sugar.
To prepare a cherry clafoutis about 24 cm in diameter, you need 500 g of ripe cherries. You can pit the cherries or not, but this cake is tastier and holds up better if you leave the pits.
1- Wash the cherries without removing the stems to avoid soaking the fruit.
2- Remove the stems from the cherries and place them gradually in a buttered cake pan.
The preparation of the clafoutis batter is quick and easy.
1- In a mixing bowl, whisk the whole eggs with the sugar and salt.
2- Add the melted butter.
3- Gradually incorporate the flour by sifting it, as lumps may form at this stage of the recipe.
4- When your mixture is smooth, thin the batter with the milk and pour it over the cherries.
5- To finish the cherry clafoutis preparation, sprinkle the cake with small pieces of butter. This trick allows you to get a well-golden clafoutis on top.
1- Preheat your oven to 180°C.
2- Carefully place the mold in the oven as the mixture is very liquid before baking.
3- Bake the cherry clafoutis for 45 minutes.
4- Five minutes before the end, sprinkle the clafoutis with vanilla sugar and put it back in the oven to caramelize.
Cherry clafoutis can be enjoyed warm or cold, without unmolding the cake beforehand.
Personally, I find it even more delicious when it has cooled down. In summer, I like to enjoy it chilled, after some time in the refrigerator.
In any case, don't forget to warn your guests if you have left the cherry pits.
