Here are the ingredients needed to make Lemon Olive Chicken for 4 people:
4 chicken thighs
1 large onion
1 large organic lemon
2 carrots
a handful of black olives
turmeric powder
couscous spices
salt and pepper
olive oil
a teaspoon of liquid honey
a tablespoon of chopped parsley
This recipe for chicken with lemon and olives is pretty easy. But you have to start it the day before because the chicken has to marinate overnight in the lemon and spices.
1- Cut the chicken thighs in half to separate the drumstick from the upper thigh.
2- Place the meat in a deep dish and drizzle with olive oil. Also add the handful of black olives.
3- Add salt and pepper and then add turmeric powder and couscous spices to coat all the chicken pieces.
4- Grate the lemon zest, then cut and squeeze the lemon and sprinkle the chicken with its juice.
To note: you can also, if you wish, add in this marinade some slices of a second organic lemon.
5- Cover the dish with cling film and leave the chicken to marinate in the fridge overnight.
1- The next day, peel and slice the onion. Peel the carrots and cut them into fairly thin slices.
2- Drain the chicken pieces and brown them in a frying pan without adding fat.
3- Heat a large casserole dish over medium heat and fry the sliced onion and carrots in a little olive oil.
4- Add the chicken pieces to the pan and pour in the marinade made of lemon, spices and black olives.
6- Heat water in a kettle and add water halfway up the pot. Cover and cook this lemon and olive chicken for about 30 minutes.
7- At the end of cooking, add a teaspoon of honey and a tablespoon of chopped parsley. Mix and serve hot, with couscous for example.
To achieve a more flavorful lemon and olive chicken, I recommend thoroughly browning the chicken pieces. It's easier to cook them separately in a pan before mixing them with the other ingredients.
1- Drain the chicken pieces.
2- Brown them in a pan without adding any fat since they have been marinated in olive oil.
1- Heat a large pot over medium heat and sauté the chopped onion and sliced carrots in a bit of olive oil.
2- Add the chicken pieces to the pot and pour in all the marinade made with lemon, spices, and olives.
3- Boil some water in a kettle and add water to half the height of the pot.
4- Cover and cook this lemon and olive chicken for about 30 minutes.
5- At the end of cooking, add a teaspoon of honey and a tablespoon of chopped parsley. Mix and serve.
Serve the lemon and olive chicken hot. This Moroccan-inspired dish is delicious with couscous.
