Looking for an original way to dress up simple egg Chinese noodles? Try our chicken and cabbage Chinese noodle recipe! With its curry and coconut milk-based sauce, this exotic dish is a perfect example of fusion food.
Here are the necessary ingredients to prepare chicken and cabbage Chinese noodles for 4 people:
400 g of egg Chinese noodles.
400 g of chicken breast.
1 green cabbage or a Chinese pak choi cabbage.
2 shallots.
2 cloves of garlic.
2 tablespoons of sunflower oil.
2 teaspoons of curry powder.
1 teaspoon of ground ginger.
1 cube of chicken broth.
20 cl of thin coconut milk.
2 tablespoons of chopped cilantro.
2 tablespoons of peanuts.
Salt and pepper.
The first step in preparing chicken and cabbage Chinese noodles is to chop the various ingredients.
1- Cut the chicken breasts into small cubes of about 1 to 2 cm on each side.
2- Slice off the hard base of the cabbage, then cut the leaves into strips approximately 1 cm wide.
3- Peel the shallots and garlic cloves. Chop them together with a knife or in a food processor.
4- Dissolve the chicken bouillon cube in 200 ml of hot water and set aside.
For this recipe of Chinese chicken and cabbage noodles, you need to pre-cook the cabbage and the Chinese egg noodles.
1- Prepare a large amount of boiling water in a pot.
2- First, immerse the green cabbage strips as this vegetable requires about 8 minutes of cooking.
3- After 4 minutes, add the Chinese egg noodles to the same pot. These very thin noodles cook in only 4 minutes.
4- When the Chinese noodles are tender, drain all the ingredients and rinse them under cold running water. Set aside.
To prepare the Chinese chicken and cabbage noodles, I recommend using a large wok or skillet.
1- Heat the sunflower oil in the wok or skillet over high heat.
2- Add the chopped garlic and shallot, as well as the ginger and curry powder.
3- Add the diced chicken and brown on all sides for about 5 minutes, lowering the heat if necessary so the shallot does not burn.
4- Once the pieces of chicken are well browned and colored by the spices, remove them from the wok and keep them warm on a plate covered with aluminum foil.
Once the various ingredients are cooked, all that's left is to assemble these elements to prepare the chicken and cabbage Chinese noodles.
1- Return the wok to medium heat and deglaze with the chicken broth and coconut milk.
2- Add the cooked noodles and cabbage, then cook for about 3 minutes until the coconut milk sauce reduces. Season with salt and pepper to taste.
3- Add the curry chicken pieces and mix well for about 2 minutes until the sauce becomes creamy.
1- Serve the chicken chow mein in deep plates, piping hot.
2- Just before serving, sprinkle each plate with crushed peanuts and chopped cilantro.
