The rustic quiche with bacon and potatoes is made with simple ingredients and can be enjoyed as a starter or as a light meal, accompanied by a green salad. We invite you to discover this delicious recipe.
Here are the necessary ingredients to prepare a rustic quiche for 4 people:
500 g of potatoes.
1 onion.
100 g of smoked bacon bits.
1 roll of shortcrust pastry.
20 cl of liquid cream.
3 eggs.
80 g of grated cheese of your choice.

The rustic quiche with bacon and potatoes is easy to prepare. The longest step involves preparing and cooking the potatoes.
1- Peel the potatoes and slice them into thin rounds.
2- Blanch the potato slices for about 10 minutes in a pot of boiling water.
This step partially cooks the potatoes, but be careful not to let them become too soft.
1- Once the potatoes are ready, drain them and set aside.
2- Peel and thinly slice the onion.
3- Heat a frying pan and sauté the bacon and sliced onion together. If the bacon does not render enough fat, you can add a drizzle of olive oil.
4- Add the potato slices and sauté everything for a few minutes. This rustic sauté will make up the filling for your country-style quiche with bacon and potatoes.
5- In another container, prepare the quiche mixture. Beat the eggs with the cream and season with salt and pepper.
1- Roll out the shortcrust pastry in a pie dish. Prick the bottom with a fork.
