The courgette macaroni risotto is a simple and delicious recipe that involves cooking the pasta in the style of a risotto, using chicken broth. We invite you to discover this original way of preparing children's favorite pasta, while adding a seasonal vegetable.
Ingredients
Here are the necessary ingredients to prepare a Risotto of courgette shell pasta for 4 people:
350 g of shell pasta
one chicken broth cube
one shallot
100 g of smoked bacon
one small courgette
10 cl of liquid or vegetable cream
one tablespoon of olive oil
salt and pepper
grated cheese
Preparation of the broth
The recipe for Risotto with courgette penne consists of cooking the pasta in the style of a risotto, by adding chicken broth to it.
So, start by preparing the broth as follows:
1- Bring 50 cl of water to a boil.
2- Dissolve the chicken broth cube in the boiling water.
3- Keep the broth warm, on low heat.
Cutting the ingredients
Then prepare the garnish for the courgette risotto with small pasta:
1- Wash the courgette and cut it into slices.
2- Peel and finely chop the shallot.
Cooking of the coquillettes risotto
As with a classic risotto, this courgette pasta risotto should be cooked in two stages, first by toasting the pasta in oil and then gradually adding the broth.
1- In a large pan, fry the bacon. When it has rendered its fat, add the shallot and a tablespoon of olive oil.
2- Sauté the bacon and shallot without browning, then add the courgette slices.
3- Once these ingredients have slightly cooked, add the pasta and mix well to toast them, meaning coat them with olive oil. Sauté everything for about 2 minutes, stirring, until the pasta becomes shiny.
4- Pour half of the broth into the pan and let it cook for 5 minutes until the liquid is almost completely absorbed.
5- Gradually add the remaining broth and continue cooking over medium heat until the pasta is cooked to your liking.
6- At the end of cooking, reduce the heat and stir in the cream. Mix gently and serve immediately.
Tasting tips
Serve the courgette macaroni risotto immediately.
In this recipe, I did not incorporate cheese into the pasta during cooking and preferred to sprinkle it directly on the plate.
If you love cheese and want to achieve an even creamier macaroni risotto, you can add Parmesan or Grana Padano to the pan at the same time as the cream.
