Earl Grey Tea Raisin Cake: A Recipe Without Milk Or Butter

If you're looking for a quick, easy and light breakfast cake recipe, try this Earl Grey Tea Raisin Cake! This cake contains no milk or butter and is incredibly indulgent thanks to the flavor of the tea and spices.

Ingredients

Here are the ingredients needed to make an Earl Grey tea raisin cake for 6 people:

150 g of raisins
1 Earl Grey tea bag
30 cl boiling water
250 g flour (preferably semi-complete)
1 level teaspoon of baking soda
75 g brown sugar
1 teaspoon of powdered cinnamon
1 pinch of nutmeg powder
1 egg
1 knob of butter for the mold

To note: for this recipe, you can use any black tea but I have a preference for Earl Grey because it brings a bergamot flavor to the cake.

Preparation of the raisins

To make this Earl Grey Tea Raisin Cake, you soak the raisins in hot tea and save the steeping tea for the cake batter.

If you can, soak the raisins in the tea the night before and let them swell overnight. Otherwise, you can soak the grapes in the hot tea for about 30 minutes.

Either way, measure very accurately 30 centiliters of boiling water to make your Earl Grey tea because you will be using this liquid in the cake batter.

Pour the hot tea into a bowl, add the raisins then cover the bowl and let it sit overnight.

Preparation of the dough

The next day, all you have to do is prepare the raisin and Earl Grey tea cake batter using the following method, which is really quick.

1- Put all the dry ingredients in a large container: flour, baking soda, brown sugar, cinnamon and nutmeg.

2- Make a well and break the whole egg in the middle. Start mixing with a wooden spoon.

3- Add the raisins and the steeping tea and mix well until you get a homogeneous paste.

Baking the cake

1- Preheat your oven to 180°C.

2- Pour the batter into a buttered cake pan.

3- Bake the raisin and Earl Grey tea cake for 45 minutes.

4- Let it cool completely before unmolding.

Note:this cake is even better if you make it ahead of time and let it sit for 1-2 days before eating.

Good to know

This Earl Grey tea raisin cake recipe is a personal reinterpretation of the Irish barm brack. The original recipe also contains candied fruit and is traditionally made for Halloween.

I find the candied fruit too sweet but I liked the method of making this cake which is quick to make and without any fat like butter, milk or oil.

That's why I came up with a less sweet version without candied fruit that I make regularly for breakfast.
