Here are the ingredients needed to make coconut milk mango French toast for 4 people:
2 fresh mangoes or 2 bowls of frozen mango pieces
half a stale baguette
20 cl of coconut milk in a brick
2 eggs
3 tablespoons of maple syrup
grated coconut
a knob of butter for cooking
maple syrup to serve
For this coconut milk and mango French toast recipe, start by preparing the sides.
1- If you are using fresh mangoes, peel and dice them.
If you are using frozen fruit, thaw them in the refrigerator several hours in advance.
2- Toast the grated coconut by heating it for a few minutes in a frying pan without adding fat.

For this coconut milk and mango French toast recipe, I counted two slices of French toast per person.
1- Cut the stale half baguette into 8 not too thin slices.
2- In a deep dish, whisk the whole eggs with the coconut milk and maple syrup.
3- Dip the bread slices in this mixture until they are well coated.

2- Brown the French toast for about 3 minutes on each side.
