2 plain Greek yogurts.
2 to 3 tablespoons of maple syrup or liquid honey.
2 apricots.
2 nectarines.
2 plums.
2 handfuls of dried fruits.
Note: this dessert can be made with any seasonal fruits. For example, you can use raspberries, white peaches, melon, or even watermelon. It is an anti-waste recipe as it allows you to use up the fruits left in your basket that tend to ripen faster in summer.
Regarding the topping made from dried fruits, you can use nuts such as pistachios and almonds or dried fruits like cranberries or raisins. The topping is optional but adds crunch and even more indulgence to this dessert.
Preparation of fruits
The recipe for Greek yogurt verrines with summer fruits is no-bake and easy. The longest step is preparing the fruits, but I recommend not cutting them too far in advance so they don't lose their vitamins or their beautiful colors…
1- Wash and dry the fruits.
2- Peel the fruits if necessary, then cut them into cubes about 1 cm on each side.
Note: For a nicer visual, it is important to cut all the fruits to the same size. Cutting them into small cubes also makes assembling the verrines easier.
3- Mix the fruits in a bowl, as if you were preparing a fruit salad but do not add sugar!
Assembly of verrines
1- Spread the Greek yogurt at the bottom of two verrines or two pretty transparent glass cups.
2- Add a drizzle of maple syrup or liquid honey on each verrine. If you have ripe fruits, one tablespoon per verrine should be enough.
Note: if you wish, you can replace the maple syrup or honey with yacon syrup or agave syrup for a lower glycemic index.
3- Arrange the fruit cubes nicely on top of the verrine.
4- Finally, sprinkle the Greek yogurt verrines with summer fruits with the topping of your choice.
