The waffle is an essential specialty for Mardi Gras... and every other day of the year! To treat people who do not digest milk well, here is a recipe for lactose-free waffles that is as easy as it is delicious.
Here are the ingredients needed to make lactose-free waffles for 4 people:
80 g vegetable margarine
2 eggs
40 cl of vegetable almond drink
2 tablespoons orange blossom water
60 g sugar
380 g of flour
To note: in this recipe, the use of a vegetable drink not only avoids lactose for intolerant people but also lightens the waffle batter recipe. The vegetable almond drink is lower in calories than cow's milk.
Containing neither gluten nor cholesterol, this drink has about thirty calories per glass, compared to a good hundred for semi-skimmed cow's milk. As long as you choose the no-sugar-added version, you benefit from a low-calorie alternative that provides the bonus of vitamins A, D and E, as well as iron and calcium! It is also possible to use an oat-based drink, a little more caloric than almond but half as much as cow's milk.
To make lactose-free waffles, simply replace cow's milk with a plant-based drink such as an almond or oat-based drink in the waffle batter.
1- Melt the vegetable margarine in a saucepan or in the microwave and set aside.
2- In a large container, whisk the whole eggs.
3- Add the vegetable drink, orange blossom water and melted margarine and mix well with a whisk.
4- Add the sugar and then the flour, sifting it to avoid lumps.
5- Whisk the waffle batter vigorously until it has a fluid and homogeneous consistency, as in the photo below.
1- Heat your waffle iron.
2- If it has a non-stick coating, there is no need to grease the plates because the batter already contains margarine.
3- For each waffle, pour a small ladle of batter into the waffle iron and close.
4- Cook the lactose-free waffles for about 3 minutes, until they turn a nice golden color.
You can serve these lactose-free waffles with anything from a simple powdered sugar veil to chocolate sauce to jam.
To make a delicious lactose-free chocolate sauce, break up some 52% cocoa dark baking chocolate in a saucepan and add a bit of plant-based almond drink.
Melt the chocolate over low heat, stirring constantly until your chocolate sauce takes on a nice smooth, shiny consistency.
