Monkfish is generally appreciated for its delicacy and lack of bones. For the holidays, we suggest preparing a dish in which a precious spice enhances the refined flavor of this fish. The recipe for saffron monkfish is both simple and delicious.
Here are the necessary ingredients to prepare saffron monkfish for 4 people:
600 g of monkfish fillets.
20 g of butter.
4 shallots.
10 cl of dry white wine.
15 cl of tomato coulis or pulp.
30 cl of liquid or vegetable cream.
saffron threads or a dose of powdered saffron.
salt and pepper.
Although it is a festive dish, preparing monkfish with saffron is effortless.
1- Cut the monkfish fillets into sections about 4 cm long.
2- Finely chop the shallots and set aside.
1- Heat the butter in a casserole dish over medium heat.
2- Sauté the shallots, then add the monkfish pieces.
3- Cook these ingredients for 5 minutes, stirring frequently.
4- Add the white wine and saffron and cook for another 5 minutes.
When the monkfish pieces are lightly browned, you can add the liquid ingredients.
1- Pour in the tomato puree and the liquid or plant-based cream.
2- Season with salt, pepper, and let the saffron monkfish simmer on low heat for about 10 minutes.
3- Taste the sauce and adjust the seasoning if necessary.
4- Add some chopped chives or parsley if you like and serve immediately.
You can serve the monkfish with saffron accompanied by rice timbales or simple steamed potatoes.
You can also prepare this festive dish in advance and reheat it gently. Caution: the sauce should not boil as overcooked fish could become rubbery.
