What if you took advantage of the arrival of the first tomatoes at the market or in the garden to make mixed salads rich in flavor and nutrients? Here is a recipe for a multicolored mixed salad that you can adapt to your tastes and the ingredients you have available.
Here are the ingredients needed to make a multi-colored mixed salad for 4 people:
3 medium tomatoes
1 cooked red beet
3 tablespoons of corn kernels
1 ball of mozzarella cheese
a few sprigs of fresh basil
garlic semolina
For the seasoning:
olive oil
balsamic vinegar
salt and pepper
To note: if you don't like some of the ingredients suggested above, you can replace the cooked beet with sliced red cabbage, the corn kernels with yellow bell pepper and the mozzarella with feta cheese or sliced button mushrooms.
This colorful mixed salad is very easy to make as you simply prepare and cut the ingredients, before assembling them in a pretty serving dish.
1- Wash the tomatoes and slice them.
2- Cut the cooked beet into small cubes.
3- Drain the mozzarella and cut it into small cubes of the same size.
4- Wash and dry the fresh basil sprigs.
1- To assemble this multicolored mixed salad, start by placing the tomato slices at the bottom of the dish.
2- Add the diced cooked beet and mozzarella so as to alternate the colors.
3- Chop the fresh basil leaves.
4- Garnish the salad with corn kernels and chopped basil.
5- Sprinkle a little garlic semolina on top and keep the dish cool until serving.

To note: I advise you to add the seasoning of salt, pepper, olive oil and vinegar at the last moment. You can even leave it up to the guests to season their share on their plate.
