Orange And Almond Powder Cake: A Gluten-free Dessert

Gluten-free cakes have a reputation for being denser than soft cakes made with wheat flour. Nevertheless, if you have the right recipe, it is possible to make amazing desserts suitable for people with gluten intolerance. Here is a recipe for a delicious orange cake with almond powder.

Ingredients

Here are the ingredients needed to make an orange and almond powder cake for 4 people:

3 eggs
125 g brown sugar
125 g almond powder
1 organic orange
1 sachet of gluten free yeast
1 pinch of salt
1 knob of butter for the mold
powdered sugar for the decoration

To note: this gluten-free dessert is very easy to make because it doesn't require any special flour, like rice or buckwheat flour. The only slightly special ingredient in the recipe is the gluten-free yeast. You can find it in organic stores or in the gluten free section of your supermarket.

Preparation of the dough

The gluten-free orange and almond powder cake is also very quick to make.

1- Break the whole eggs into a bowl.

2- Whisk the eggs with the brown sugar until the mixture is frothy.

3- Add the pinch of salt, the gluten free yeast and the almond powder.

4- Wash the orange and grate its zest into the dough, ideally with a microplane.

5- Finally, squeeze the orange and add its juice to loosen the cake batter.

Baking the cake

I recommend baking this orange and almond powder cake in a small springform pan about 20 cm in diameter.

In this recipe, the almond powder replaces both the flour and the fat. This is a great trick to make a healthier dessert that is suitable for people with gluten intolerance.

On the other hand, I would like to point out that the above proportions only make a small cake, hence the importance of not using a pan that is too large.

1- Preheat your oven to 180°C.

2- Lightly butter the cake pan and line it with parchment paper (otherwise you won't be able to unmold this very moist cake).

3- Pour the batter into the pan and bake.

4- Bake this gluten-free cake for 55 minutes until the top is golden brown.

5- Check for doneness with the tip of a knife: the blade pressed into the heart of the cake should come out dry.

Finishing and decorating the cake

You can serve this orange and almond powder cake warm or cold, after dusting it with a veil of confectioners' sugar.

For an even prettier visual, I made a flower-shaped decoration using blanched almonds and small pieces of orange zest.

Tasting advice

The orange and almond powder cake is really soft and even crumbly, as you can see in the photo below.

It's delicious served with a cup of tea or coffee or topped with melted chocolate for those with a sweet tooth.
