Plum And Almond Clafoutis: An Autumn Recipe

The plum season extends even as summer comes to an end. You can then enjoy these tasty fruits to make jams, pies, and all kinds of desserts. Since the temperatures are now more reasonable, I suggest you turn the oven back on to make a delicious plum and almond clafoutis.

Ingredients

Here are the ingredients needed to make a plum and almond clafoutis for 4 people:

500 g of plums.
3 handfuls of sliced almonds.
4 eggs.
5 tablespoons of sugar.
1 pinch of salt.
5 tablespoons of flour.
25 cl of milk.
30 g of butter for the batter.
30 g of butter for the top of the clafoutis.
1 to 2 teaspoons of bitter almond extract.
1 knob of butter for the dish.

Preparation of plums

For the topping of this clafoutis, you can use different varieties of plums: simple red or yellow plums, damsons, or even mirabelles.

1- Wash and dry the plums.

2- Cut them in half and pit them.

3- Slice the two halves into strips.

4- Butter a cake pan and place the plum strips at the bottom of the pan.

Note: For this plum and almond clafoutis recipe, it is unnecessary to arrange the plum strips harmoniously.

Preparation of the clafoutis batter

The preparation of the clafoutis batter is easy and rather quick.

1- Melt 30 g of butter and let it cool.

2- Beat the whole eggs into an omelette, with the sugar and a pinch of salt.

3- Add the sifted flour and mix with a whisk until you get a homogeneous batter.

4- Add the melted butter then dilute the clafoutis batter with milk.

Note: If you want to prepare this clafoutis with plums and almonds in a lactose-free version, you can replace cow's milk with almond milk.

5- Finally, flavor the clafoutis batter with bitter almond extract.

Assembly and baking of the clafoutis

1- Preheat your oven to 180°C.

2- Pour the clafoutis mixture over the fruit.

3- Sprinkle the top of the plum and almond clafoutis with small knobs of butter.

4- Bake the clafoutis for 45 minutes until it is lightly golden.

Preparation of toasted sliced almonds

While the clafoutis is baking in the oven, toast the sliced almonds in a pan without adding any fat.

Count on about 5 minutes of cooking over medium heat, stirring constantly to prevent the almonds from burning.

Set aside the toasted almonds in a bowl.

When the plum and almond clafoutis is done, let it cool before sprinkling with toasted sliced almonds and serving.
