Plum Gratin: An Easy Recipe

Plums are an essential fruit of autumn. If you want to make a quick dessert with this seasonal fruit, we suggest you discover a very simple plum gratin recipe, to be prepared with just a few ingredients.

Ingredients

Here are the necessary ingredients to prepare a plum gratin for 4 people:

6 medium plums.
3 eggs.
20 cl of liquid cream or almond cooking cream.
40 g of brown sugar.
1 sachet of vanilla sugar.
A pinch of salt.
1 knob of butter or vegetable margarine for the mold.

Note: I prepared this dessert in a vegetarian version using almond-based cream called Amandina or almond cooking cream. But you can of course make this fruit gratin with regular whipping cream.

Preparation of plums

For this plum gratin recipe, I recommend buying organic fruits so that you can keep the skin of the plums.

1- Rinse the plums under a cold water stream.

2- Dry them before cutting.

3- Cut the plums into 1 cm thick slices, rotating around the pit.

Device preparation

This plum gratin recipe is very quick and easy to make, as all you need to do is coat the fruits with a mixture of eggs, sugar, and cream.

1- Beat the whole eggs with the cream.

2- Add a pinch of salt.

3- Add the brown sugar and vanilla sugar and mix well.

Assembly of the fruit gratin.

You can prepare this plum gratin in a rectangular gratin dish or in a round dish.

1- Butter the gratin dish.

2- If you are using a round dish, arrange the plum slices in a rosette pattern starting from the edge. Place the fruit slices tightly together, moving towards the center of the dish.

Note: If you are using a rectangular dish, simply arrange the fruit slices in rows. You can also mix different types of fruits, such as plums and apricots, to create different colored rows.

3- Pour the egg and cream mixture over the fruits.

Baking the fruit gratin

1- Preheat the oven to 180°C.

2- Cook the plum gratin for 40 to 45 minutes, depending on the size of the dish and the thickness of the gratin.

3- The fruit gratin is cooked when it has the consistency of a custard or clafoutis and is golden on top.

4- You can serve this dessert warm or cold.
