Need some comfort? How about making delicious potato pancakes like Cyril Lignac? Thanks to the chef's recipe, these soft and tasty patties are absolutely easy to make. Explanations.
Here are the ingredients needed to prepare the recipe for potato Pancakes given by Cyril Lignac in the show Tous en cuisine during the first lockdown, that is for 4 people :
150 g of potatoes
4 cl of full cream
40 g of flour
100 g hard cheese (Emmental, Gruyere or Parmesan for example)
2 eggs
olive oil for cooking
To make potato Pancakes in the manner of Cyril Lignac, we start by preparing homemade mashed potatoes.
1- Bring a pot of salted water to a boil.
2- Peel and dice the potatoes.
3- Cook the diced potatoes in the boiling water for 12 minutes.
4- Meanwhile, cut half of the cheese into small cubes and grate the rest.
5- When the potatoes are cooked, drain them and mash them with a fork or potato masher.
6- Add the liquid cream, flour, grated and diced cheese, one whole egg and one egg yolk. Add salt and pepper moderately.
Unlike Cyril Lignac, I did not cook this directly in the pan as a single potato pancake, but made several small pancake-sized patties.
1- Heat a large skillet over high heat.
2- Drizzle with olive oil.
3- To form small potato patties, take a tablespoon of the mixture and drop it vertically into the pan.
4- Make sure to space the small piles in the pan. They will take a round shape by themselves.
5- After a few minutes, flip the patties over and cook about 2 minutes on the other side.
To note: if you find making small galettes too time consuming or complicated, follow Cyril Lignac's cooking method. Pour the potato mixture directly into the pan. Level its surface to form a single galette and let it brown for about 4 minutes before turning it over.
6- Serve hot with a green or mixed salad.
Cyril Lignac recommends preparing a salad with arugula, cherry tomatoes and Parmesan shavings.
