Soups, which combine pleasure and nutritional qualities, are essential when the winter season returns. To delight the little monsters on Halloween night, we offer you an easy pumpkin soup recipe. Its velvety smoothness will appeal to both children and adults.
Pumpkin soup is very simple to prepare.
1- Remove the skin from the pumpkin, take out the seeds, and rinse the flesh in cold water.
2- Peel the potatoes and rinse them.
3- Peel the garlic cloves and cut them in half to remove the germ.
4- Cut the potatoes and pumpkin flesh into cubes.
5- Rinse all the vegetables again before placing them in a pot, pressure cooker, or soup maker. Whichever cooking method you choose, cover with cold water and add coarse salt.
The cooking time for pumpkin soup depends on the chosen method.
If you use a soup maker, as shown in the following picture, close the appliance and select the "smooth soup" program. The cooking and blending are done automatically during this program, which lasts about 30 minutes.
If you cook the soup in a pot, you should allow about 20 minutes of cooking, until the vegetables are tender, then blend the soup using an immersion blender to achieve a creamy texture.
Serve this pumpkin soup recipe piping hot. You can accompany it with crème fraîche, grilled smoked bacon bits, or slices of grilled pancetta.
