The salmon and pea quiche is an original way to make a savory pie with fish. It is prepared with fresh salmon and fairly large garden peas. Here are the steps of this easy recipe in pictures.
Here are the necessary ingredients to prepare a salmon and pea quiche for 4 to 6 people:
220 g of flour.
1 teaspoon of baking powder.
2 pinches of salt.
2 turns of the pepper mill.
7 cl of olive or sunflower oil.
13 cl of hot water.
200 g of fresh salmon.
150 g of garden peas.
3 eggs.
20 cl of liquid or plant-based cream.
10 cl of milk.
2 sprigs of mint.
1 organic lemon.
salt and pepper.
To make this salmon and pea quiche, I recommend preparing a homemade shortcrust pastry using the quick method below.
1- Pour the flour, baking powder, salt, and pepper into a large mixing bowl.
2- Heat the water in a kettle to at least 45°C.
3- In a measuring glass, mix the oil with the very hot water, then pour these liquid ingredients into the mixing bowl.
4- Stir first with a wooden spoon, then knead by hand until you can form a ball.
5- Roll out this homemade shortcrust pastry by hand in a greased pie dish. It does not need to rest. Prick the bottom of the pastry and mark the edges with a fork.
Note: for even more convenience, you can also use store-bought shortcrust pastry.
The filling of this salmon and peas quiche consists of fresh salmon cubes, garden peas, finely chopped mint, and zest of yellow lemon.
1- If using frozen peas, thaw them beforehand.
2- Cut the fresh salmon fillets or steaks into approximately 1 cm-sized cubes.
3- Wash and dry the mint leaves before finely chopping them.
4- Wash and dry the lemon.
To prepare the salmon and pea quiche, simply mix all the ingredients.
1- In a bowl, whisk the whole eggs with the liquid cream and milk.
2- Add the peas and diced salmon.
3- Season the mixture with salt, pepper, grated lemon zest, and chopped mint.
4- Pour this mixture onto the pastry base.
1- Preheat your oven to 200°C.
2- Cook the salmon and pea quiche for about 30 minutes until it is golden brown.
Serve this salmon and pea quiche on a bed of green salad as shown in the photo below.
