At aperitif time, we love to spread vegetable preparations such as hummus or eggplant caviar. But have you ever tried this type of recipe with zucchini? Here is a quick and easy recipe for a zucchini spread with sesame.
Here are the ingredients needed to make Sesame Zucchini Spread for 4 people:
3 Nice trumpet zucchini
a drizzle of olive oil
one tablespoon of tahini or sesame oil
a tablespoon of rapeseed oil
half a teaspoon of garlic powder
a teaspoon of cumin
sweet paprika
sesame seeds
salt and pepper
To prepare this sesame zucchini spread, start by stewing the zucchini in slices.
1- Wash the zucchini and cut off the ends. It is not necessary to peel them.
2- Cut the zucchinis in rather thin slices.
3- Heat a little olive oil in a frying pan.
4- Fry the zucchini slices over medium heat for about 5 minutes. Season with salt and pepper.
5- Lower the heat and cook the zucchini slices covered for about 15 minutes, stirring regularly, until tender.
6- Let the cooked zucchini cool completely before continuing with the recipe.
1- Pour 250 g of cooked zucchini into the bowl of a blender.
2- Add the garlic powder, cumin and spoonfuls of sesame (or tahini) and rapeseed oil.
3- Blend everything for several minutes until your spread has a smooth texture.

4- Pour the sesame zucchini spread into a pretty bowl and set it aside in the fridge until ready to serve.
5- Just before serving, sprinkle the spread with sesame seeds and sweet paprika powder.

To note: I recommend serving this light spread on slices of whole grain bread or cereal bread.
