Shrimp And Vegetable Soup: An Easy Recipe

What better way to warm up on a cold day than with a spicy broth? Here's an easy recipe to make shrimp and vegetable soup.

Ingredients

Here are the ingredients needed to make shrimp and vegetable soup for 4 people:

2 leeks
4 carrots
4 medium potatoes
600 g peeled grey shrimp
1 tablespoon cumin
1 tablespoon paprika
1 teaspoon ginger powder
2 vegetable stock cubes
chopped chives
salt
olive oil

Preparation

To make this shrimp and vegetable soup, start by preparing the vegetables.

1- Wash and sort the leeks to keep only the white and the most tender green parts.

2- Wash and peel the potatoes and carrots.

3- Thinly slice the leek. Cut the carrots into thin slices and the potatoes into strips. Reserve the cut vegetables in separate containers.

4- If you bought whole shrimp, peel them completely for the rest of the recipe.

5- Prepare one litre of vegetable stock by diluting the cubes in one litre of boiling water.

Cooking

1- Heat a drizzle of olive oil in a Dutch oven or large saucepan.

2- Brown the chopped leek with a pinch of salt and the various spices.

3- When the leek starts to brown, add the carrot slices and a second pinch of salt. Fry for about 5 minutes before adding the potato slices.

4- Fry for a few more minutes before adding the vegetable stock.

5- Cook this broth for 30 minutes on a low simmer.

6- Just before serving, add the peeled grey shrimp and let them cook about 2 minutes, until they turn pink.

7- Sprinkle the shrimp and vegetable soup with chopped chives.
