Spinach And Lamb's Lettuce Soup: An Easy Recipe

For all those who want to go into detox mode after the holidays, here is the recipe for a light and delicious spinach and lamb's lettuce soup! This soup, easy to prepare with simple ingredients, is both tasty and rich in fiber.

Ingredients

Here are the ingredients to make a spinach lamb's lettuce soup for 4 people :

100 g lamb's lettuce
125 g spinach leaves
3 medium potatoes
1 small white onion
40 cl chicken stock
10 g butter
1 tablespoon of olive oil
1 pinch of salt
1 pinch of curry powder
10 cl of light cream (or vegetable cream)


To note: to prepare this soup, I was inspired by Cyril Lignac's recipe for lamb's lettuce velouté with curry presented in the show Tous en cuisine on M6. I simply adapted the chef's recipe by using a mixture of spinach leaves and lamb's lettuce.

Cyril Lignac had specified in the show of November 29, 2022 that it is possible to realize this recipe of velouté with all kinds of salads and leafy vegetables...

Preparation of the broth

To make this spinach and lamb's lettuce soup, you need about 40 cl of chicken stock.

Your soup will be even better if you use homemade broth that you have recovered after cooking a chicken in a pot (see our recipe opposite).

Failing that, simply dilute one bouillon cube in 40 cl of boiling water and set aside.

Preparation of vegetables

To make this spinach and lamb's lettuce soup, it's more convenient to precook the potatoes because the spinach leaves and lamb's lettuce florets cook very quickly.

1- Sort the spinach leaves and small bunches of lamb's lettuce to remove the thickest stems.

2- Peel the potatoes and cut them into thin strips.

3- Cook them 10 minutes in a large pot of boiling salted water, then drain and set aside.

4- Thinly slice the white onion.

Preparation of the soup

1- Heat a casserole or a large saucepan and add the butter and olive oil.

2- Brown the minced onion without coloring.

3- When the onion is tender, add the lamb's lettuce and spinach leaves. Cook for a few minutes, stirring with a wooden spatula to prevent the leaves from sticking.

4- Once the spinach and lamb's lettuce leaves have given off their water, add the pre-cooked potato strips.

5- Season with salt and curry powder.

To note: you can put between half a spoon and a teaspoon of curry powder depending on whether you prefer your lamb's lettuce spinach soup more or less spicy...

Cooking the soup

1- Add the chicken broth.

2- Cook the lamb's lettuce and spinach soup for about 10 minutes with a lid on and at low boil.

Velvet finishings

1- Blend the spinach and lamb's lettuce soup with a hand blender.

2- You can add a little light cream or vegetable oatmeal cream if the texture of the soup seems too thick.

3- Adjust the seasoning with salt and pepper if necessary.

4- Serve this soup hot, adding a little cream on top of each bowl for more deliciousness.
