Here are the necessary ingredients to prepare spring salmon ricotta tartlets for 4 people:
1 roll of pure butter puff pastry.
100 g of ricotta.
4 slices of smoked salmon.
40 g of fresh shelled peas or frozen garden peas.
60 g of shelled broad beans.
8 pink radishes.
1 pinch of paprika for decoration.
1- Preheat your oven to 180°C (356°F).
2- Roll out the puff pastry and use a cookie cutter or an upside-down bowl to cut out circles of about 10 cm in diameter.
3- Place the puff pastry discs on a baking sheet lined with parchment paper.
4- Bake the pastry bases for 15 minutes at 180°C (356°F), until they are nicely golden brown.
5- Let the puff pastry bases cool on a wire rack. They must be completely cold before assembling the spring salmon ricotta tartlets.
While the puff pastry bottoms are baking in the oven, prepare the peas.
Whether you're using fresh or frozen peas for this spring salmon ricotta tartlet recipe, I recommend blanching them in boiling salted water for 5 to 6 minutes.
Note: if you haven't found any small broad beans or fava beans, peel the larger beans of two skins and blanch them at the same time as the peas.
Cool the vegetables under cold running water to preserve their green color, then drain and set aside.
To save time during assembly, prepare the various toppings for the spring salmon ricotta tartlets in separate containers.
1- Wash the radishes and slice them into thin rounds.
2- Cut the smoked salmon slices into small pieces or thin strips.
3- Take advantage of this cutting step to ensure there are no bones in the smoked fish.

1. Spread ricotta on the puff pastry bases using a teaspoon.
