Here are the ingredients needed to make a red fruit almond tart for 6 people:
450 g of frozen red fruits
a roll of shortcrust pastry
100 g almond powder
100 g sugar
a pinch of cinnamon
2 eggs
8 cl of vegetable almond cream
To note: the almond cream used to garnish amandine tarts is usually prepared with almond powder, sugar and butter. To lighten the recipe, we replaced the sweet Butter with an almond-based vegetable cream.
To prepare this red fruit almond tart, remember to take the red fruit out of the freezer the day before.
1- Thaw the frozen berries overnight in a sieve placed over a container to drain.
2- The next day, prepare the almond cream. In a bowl, mix 80 g of almond powder, the sugar and the cinnamon.
3- Add the whole eggs and the almond cream. If not, you can use regular cream. Mix well until you obtain a homogeneous cream.
