When the winter cold sets in, cheese is an essential ingredient in comfort food recipes. For all the raclette cheese fans who don't want to take out the dedicated appliance, here is a recipe for a raclette-style pie.
When the winter cold sets in, cheese is an essential ingredient in comfort food recipes. For all the raclette cheese fans who don't want to take out the dedicated appliance, here is a recipe for a raclette-style pie.
Here are the ingredients needed to make a raclette-style pie for 4 people:
6 medium potatoes
1 chopped onion
75 g of smoked bacon
6 to 8 slices of raclette cheese
1 roll of shortcrust pastry
1 tablespoon of olive oil (optional)
2 pinches of dried thyme
1 pinch of coarse salt
salt and pepper
To note: for this raclette-style pie recipe, I recommend cutting the potatoes into thin strips. This will make them easier to arrange on the shortcrust pastry when assembling the tart.
For the filling of this raclette-style pie, I was inspired by my favorite tartiflette recipe.
1- Cut the potatoes into strips.
2- Heat a large pot of boiling water with a pinch of coarse salt and blanch the potato strips for about 10 minutes. Drain and set aside.
3- In a very hot pan, fry the smoked lardons with the chopped onion. If the lardons do not render enough fat, add a tablespoon of olive oil.
4- Add the pre-cooked potato slices and fry for a few minutes. Season with the dried thyme and a little salt and pepper. Do not add too much salt as the bacon and raclette cheese are already salty.
For this raclette-style pie, it is quicker and more practical to use a ready-made shortcrust pastry.
1- Unroll the shortcrust pastry in a pie pan, keeping the baking paper. Mark the edges of the tart and prick the bottom of the pastry with a fork.
2- Spread the potato and bacon filling over the shortcrust pastry, making sure to spread it evenly.
3- Add the slices of raclette cheese on top of the pie.
To note:in the photo below, I used 6 slices of cheese, but you can put a little more if you're a real raclette fan.
1- Preheat your oven to 180°C.
2- Bake the raclette-style pie for about 30 minutes, until the cheese is melted and golden.
Serve this raclette-style pie hot, accompanied, if you wish, by a salad of young shoots.
This easy-to-make recipe should comfort you on cold winter days.
