Here are the necessary ingredients to prepare a melon shrimp salad for 2 people:
1 pomelo
a dozen pink shrimps
a small box of lamb's lettuce
1 ripe avocado
1 small bag of tortilla chips
2 tablespoons of olive oil
salt and pepper
Note: for people who do not like avocado, it is possible to prepare a grapefruit shrimp salad without avocado by replacing this fruit with cucumber slices, for example.
The preparation of this shrimp and pomelo salad is very simple. The most technical part of the recipe is to peel the pomelo to retrieve the flesh without the white skin.
1- Cut the base of the pomelo and a cap on top of the fruit so that it can be held upright.
2- Place the pomelo on a dessert plate to collect the pomelo juice for the rest of the recipe.
3- Hold the fruit firmly upright and remove its peel by sliding a knife blade between the peel and the pulp.
4- Follow the curve of the fruit and repeat the same gesture from top to bottom around the pomelo.
5- All that remains is to cut the pomelo into flesh without the white skin or zest.
1- If you are using whole shrimp, peel them and set them aside.
2- Rinse and thoroughly dry the lamb's lettuce.
3- Pit the avocado and remove its skin before cutting it into slices.
Once you have prepared all the ingredients, all you have to do is assemble them in two plates to obtain a delicious grapefruit shrimp salad.
1- Start by placing a handful of lamb's lettuce at the bottom of each plate.
2- Arrange the grapefruit supremes and avocado slices in a rosette around the plate.
3- Nicely place 6 peeled pink shrimps on top of the salad.
4- For the seasoning, drizzle each plate with a tablespoon of olive oil, the grapefruit juice that you previously set aside, a pinch of salt, and a turn of the pepper mill.
Note: in this salad recipe, you can replace the pepper with spices that you like such as Espelette pepper or ground cumin for example.
5- As a final touch, stick some tortilla chips on top of the salad.
In this grapefruit avocado shrimp salad, Mexican corn chips replace croutons advantageously because they bring crunchiness and are gluten-free!
