The Vacherin With Dried Fruits: A Festive Dessert

The iced vacherin is an elegant and festive dessert that can easily be made with ready-made ice cream and meringues bought from the bakery. We offer you a possible version of this frozen specialty: the vacherin with dried fruits and nuts.

Ingredients

Here is the list of ingredients needed to make the vacherin aux mendiants:
- ¾ liter of vanilla ice cream
- ¾ liter of pistachio ice cream
- 50 g of unsalted pistachios
- 50 g of pine nuts
- 50 g of hazelnuts
- 50 g of candied orange peel
- 20 small meringues
- 15 cl of heavy cream
- 2 packets of vanilla sugar
- 30 g of flaked almonds.

Preparation of ingredients

In a hot pan without fat, brown the pine nuts and hazelnuts. Let them cool and roughly chop them with the pistachios.

Crush 6 meringues into small pieces.

Cut the candied orange peels into small cubes, which will also be used as a garnish for this Vacherin with mendiants.

Assembling the vacherin

The Vacherin with candied fruits is made in a large charlotte mold.

1) Line the bottom of the mold with three-quarters of a liter of vanilla ice cream.

2) Add a layer of candied fruits using about two-thirds of the mixture of pistachios, hazelnuts, pine nuts, and pieces of candied oranges.

3) Sprinkle with meringue shards.

4) Add a layer of pistachio ice cream.

5) Sprinkle with the remaining candied fruits and place the Vacherin in the freezer for at least two hours.

Final touch

Whip the very cold heavy cream. Add the vanilla sugar when it is almost firm to make whipped cream.

Run the charlotte mold under hot water to unmold the vacherin more easily.

Decorate the vacherin with mendiants using the remaining meringues by gently dipping them in the whipped cream and sticking them around the edge of the frozen cake. Sprinkle with slivered almonds and small dollops of whipped cream (ideally made with a piping bag).

You can also keep this vacherin in the freezer for a few days and take it out 10 minutes before serving.
