More indulgent than the traditional tomato mozzarella salad, the tomato and burrata salad is just as easy and quick to prepare. We invite you to discover this summery recipe that showcases tomatoes of all colors.
Here are the necessary ingredients to prepare a tomato and burrata salad for 2 people:
1 red tomato (preferably beefsteak variety)
1 orange tomato
1 burrata
1 bunch of basil
1 tablespoon of almond powder
1 teaspoon of garlic powder
3 to 4 tablespoons of olive oil
salt and pepper
Note: For this recipe, I recommend using at least two different colored tomato varieties to achieve a more visually appealing dish as well as different flavors on the plate. Yellow, orange, or green tomatoes have a different taste than red tomatoes, so don't hesitate to try the pineapple tomato or the Green Zebra!
To season this tomato and burrata salad, simply prepare a homemade Genovese pesto with garlic, basil, and olive oil.
The traditional pesto recipe typically includes pine nuts, but I have replaced this ingredient with almond powder, which is cheaper and easier to find in stores.
1- Wash, dry, and separate the basil leaves.
2- Set aside a few whole basil leaves for decoration if desired, and place the rest in the bowl of a food processor.
3- Add the garlic powder and almond powder, and blend until finely chopped.
4- Add 2 tablespoons of olive oil and blend again until your homemade pesto forms a paste.
5- Pour the Genovese pesto into a small bowl and add enough olive oil to completely cover it.
Note: This trick will allow you to store your pesto in the refrigerator for a longer period without it oxidizing, as the olive oil forms a protective layer that prevents the other ingredients from coming into contact with air.
Once the pesto is ready, preparing the tomato and burrata salad is very quick. You can actually prepare the pesto in advance and store it for several days in a bowl or jar in the refrigerator to facilitate the preparation of your composed salads throughout the summer.
1- Wash and dry the tomatoes.
2- Using a cutting board and a serrated knife, cut the tomatoes into slices as shown in the photo below.
To make tomato and burrata salad for 2 people, I recommend preparing a large shared salad plate.
1- Arrange the slices of orange and red tomatoes on the plate, alternating the colors.
2- Season with salt and pepper.
3- Mix the reserved pesto in a bowl before using it to dress the tomato slices.
4- Drain the burrata and simply place it in the center of the plate.
5- Since this creamy mozzarella has a very mild taste, I recommend adding a twist of freshly ground pepper on top of the burrata.
Note: From this basic recipe, you can prepare different variations by sprinkling this summer salad with fresh basil leaves, black olives, or toasted pine nuts.
Keep the tomato and burrata salad refrigerated until ready to serve.
At the time of serving, simply cut the burrata in half to reveal its creamy center, as shown in the photo below.
