Zucchini Fritters With Mint: An Easy Recipe

In the Nice region, we usually make zucchini flower fritters and fritters filled with thin slices of tromboncino zucchini. I recently discovered another version made with grated zucchini that is just as delicious. Here is the recipe for zucchini fritters with mint.

Ingredients

Here are the ingredients needed to prepare zucchini fritters with mint for 4 people:

1 medium zucchini.
3 tablespoons of flour.
1 teaspoon of baking powder.
2 eggs.
1 small bunch of mint.
1 clove of garlic or 1 spring onion.
salt and pepper.
grapeseed oil for cooking.

Preparation of grated zucchini

The first step to make zucchini fritters with mint is to grate the zucchini.

It is not necessary to peel the zucchini, especially if you are using a tromboncino zucchini from Nice. By keeping the skin, this vegetable releases less water, which is preferable for making fritters.

1- Grate the zucchini with a coarse grater.

2- Salt and pepper.

3- Let the grated zucchini drain in a colander for about an hour.

Preparation of the filling

1- Wash and dry the mint leaves.

2- Chop the mint with the previously de-germed garlic clove or with the spring onion.

Note: you can adjust the amount of mint in this mixture to your taste. This blend will be used to season the batter for the zucchini and mint fritters.

Preparation of the dough for fritters

The preparation of the donut batter is very simple and quick.

1- Whisk the whole eggs in a bowl. Add salt and pepper.

2- Add the flour and baking powder by sifting them.

3- Squeeze the grated zucchini between your hands before incorporating it into the mixture.

4- To finish the zucchini fritter batter with mint, add the mixture of mint and garlic or scallion.

Cooking donuts

You don't need to let the batter rest before frying the zucchini mint fritters.

For this recipe, as for all savory or sweet fritter recipes, I recommend using grape seed oil, which withstands high temperatures well.

1- Heat the grape seed oil in a deep fryer or a simple pan.

2- Using a tablespoon, take spoonfuls of the mixture and slide them into the hot frying oil.

3- Fry the fritters for about 2 minutes on each side until they are puffed up and golden brown.

4- Once they have a nice color, drain the fritters with a slotted spoon and place them gradually in a deep dish lined with paper towels.

Tasting tips

Serve the zucchini fritters with mint without delay. They are best when warm or hot.
