A concept developed by the Hôtel de Crillon

Since 2019, Hotel de Crillon has brought a breath of fresh air and indulgence to the capital with an unprecedented concept: an ice cream cookie cart! As the name suggests, an ice cream cookie is a dessert made of a very soft, barely baked cookie, a generous layer of ice cream, and a crunchy coating.

These ice cream sticks, rounded like biscuits, are one of the signature desserts of Matthieu Carlin, the pastry chef of the legendary Parisian palace. These unique ice creams promise us a thousand delights and a perfect balance between freshness and indulgence.

Indeed, Matthieu Carlin is dedicated to delighting Parisians and tourists passing through the capital with increasingly frosty creations. But those of us who are more reasonable can rest assured: the chef also makes it a point to offer low-sugar creations that highlight natural flavors while remaining comforting and nostalgic.

A fleeting delight to discover in Paris

Every year, as the warm days return, the comeback of the ice cream cookie cart at the Hôtel de Crillon is a highly anticipated event for gourmets and the most discerning ice cream lovers.

In 2024, the cart will make its return to Paris on June 27th at Place de la Concorde. Foodies can discover the ice cream cookie concept or try a new flavor on the Terrasse Concorde of the Hôtel de Crillon and in the Butterfly Pâtisserie tea room. Despite the prestige of this Parisian address, this ice cream dessert remains affordable, priced at €10.

This year, the Hôtel de Crillon has partnered with the non-alcoholic wine range Nooh by La Coste to offer its customers an even more complete experience. You can enjoy a glass of non-alcoholic rosé and savor an ice cream cookie while taking in a breathtaking view of Place de la Concorde.

Thanks to this collaboration, the Parisian palace brings a touch of Provence to the capital. Chef Matthieu Carlin has also created a unique ice cream flavor this year that evokes the South: the apricot and non-alcoholic rosé ice cream cookie!

This novelty will be offered, on-site or to-go, alongside the Crillon's cookie cart classics:
• the classic dark chocolate, pecan, vanilla, caramel.
• the pistachio-raspberry sorbet cookie, as fruity as it is colorful.

The hardest part, of course, will be choosing between these three tempting flavors!

The homemade ice cream cookie is trendy.

For those who haven't planned to go to Paris this summer, there's an alternative solution to follow the ice cream cookie trend: make your own homemade ice cream cookies!

Without claiming to rival the wonderful creations of the chef at the Hôtel de Crillon, you can delight yourself and your guests with a very simple recipe. In fact, it's more of an assembly than a proper cooking recipe. To ensure the result meets your expectations, you should pay attention to the quality of the ingredients used.

To make 4 homemade vanilla ice cream cookies, you will need:
8 chocolate chip cookies.
50 cl of vanilla ice cream.
some hazelnut pieces, praline, or chocolate chips for decoration.

Note: For this ice cream cookie recipe, you can of course use gluten-free cookies. The decorations are optional, and you can skip these ingredients if you want to lighten the recipe.

The preparation of this dessert is very simple:
1- Take the ice cream out of the freezer about 5 minutes before using it so that it is easier to spread.

2- Spread a generous layer of vanilla ice cream on four cookies, on the smooth side of the biscuits.

3- Close the dessert with the remaining four cookies, as if making a sandwich or macaron.

4- Press lightly so that the biscuits adhere well to the ice cream. Smooth the edges with a knife blade and sprinkle the ice cream with hazelnut pieces, praline, or chocolate chips if desired.

5- Serve immediately. Like all ice creams, this star dessert of the summer doesn't wait!
