Leek-wrapped Fish Parcel: A Flavorful Recipe
Even though it's great for health, we don't always know how to prepare fish. Fish in parchment with leeks is a light and tasty recipe that can be cooked either by steaming or in the oven. We invite you to discover this simple-to-make recipe.
Ingredients
Here are the necessary ingredients to prepare a leek and fish parcel for 4 people:
- 4 leeks.
- 4 white fish fillets.
- 20 cl of light cream.
- one lemon.
- some dill.
- salt and pepper.
- 1 tablespoon of olive oil.
- 10 g of butter.
Note: for this recipe, you can use fresh or frozen fish such as haddock, hake, or cod. You can also replace the cream with a plant-based alternative made from oats.
Leek Preparation
1- Sort and carefully wash the leeks to remove all the dirt.
2- Finely slice the white part of the leeks and the most tender green parts.
3- Sauté the sliced leeks in a pan with a mix of butter and olive oil. Season with salt and pepper.
4- Add about 10 cl of hot water, cover, and let it cook on low heat and steamed for 15 to 20 minutes. Set aside this leek fondue for assembling the fish en papillote with leek.
Assembly and cooking of the papillote
For this leek and fish en papillote recipe, you can either prepare individual parcels and place them in an ovenproof dish or make a single large parcel directly in the basket of your steamer.
1- Prepare the parchment paper sheets. Place a fish fillet in the center of each sheet or line up the fish fillets in your large parcel.
2- Cover the fish fillets with the leek fondue.
3- Add a drizzle of fresh cream, a squeeze of lemon juice, and sprinkle with dill.
4- Seal the leek and fish en papillote.
5- Steam the parcels for about 10 minutes or bake in the oven at 180°C (350°F) for 12 minutes.
Note: Adjust the cooking time according to the thickness of the fish fillets. Also, increase the cooking time by 5 minutes if you did not defrost the fish beforehand.
