Carrot Cake: A Delicious Recipe

Carrot cake is an English-origin specialty that later made its way to the United States. It's a moist cake made with... grated carrots. This delicious dessert is most commonly topped with a frosting made of cream cheese and lemon. Here, we offer you a lighter version simply adorned with slivered almonds and cinnamon sugar.

Ingredients

Here are the necessary ingredients to make a Carrot cake for 6 people:

50 g of flour.
1 packet of baking powder.
125 g of almond or hazelnut powder.
1 pinch of salt.
2 eggs.
100 g of brown sugar.
5 cl of sunflower oil.
4 finely grated carrots.
2 teaspoons of cinnamon.
1 teaspoon of powdered sugar for decoration.
A handful of flaked almonds.

Grated carrot preparation.

The Carrot cake is quite easy to prepare. The secret to its incredibly moist texture lies in its main ingredient: grated carrots!

1- Peel and wash the carrots.

2- Grate the carrots finely, using a grater or food processor.

3- You should get between 200 and 250 grams of grated carrots.

Preparation of dry ingredients

To make this carrot cake, I advise you to prepare the dry and wet ingredients separately.

1- Sift the flour and baking powder into a large bowl.

2- Add the almond flour, a pinch of salt, and a teaspoon of ground cinnamon.

Preparation of liquid ingredients

1- In another bowl, whisk the whole eggs with the sugar until the mixture is frothy.

2- Add the oil and mix well. The liquid ingredients should be well emulsified before being incorporated into the carrot cake batter.

Carrot cake batter preparation

To finalize the carrot cake batter:

1- Incorporate the wet ingredients into the container with the dry ingredients.

2- Add the grated carrots to loosen the batter and mix well.
It is normal for this cake's batter to contain a large proportion of carrots.

Carrot cake finishes

If you don't like frosting made with powdered sugar or cream cheese, you can use the following trick to finish off the carrot cake and decorate it.

1- Pour the batter into a greased loaf pan.

2- Mix 1 teaspoon of cinnamon with 1 teaspoon of sugar.

3- Sprinkle the raw cake with this mixture.

4- Spread the sliced almonds over the top of the cake before baking.

Baking the carrot cake

1- Preheat your oven to 180°C (350°F).

2- Bake the carrot cake for about 40 minutes.

3- Let the cake cool before unmolding it.
