Chestnut Charlotte: A Festive Dessert
Chestnut charlotte is a refined dessert that is simple to prepare for special occasions. Here is the recipe for this charlotte, which can be served as an elegant cake or as individual charlottes.
Ingredients
Here are the ingredients needed to prepare a chestnut charlotte for 8 people or to make 6 to 8 small individual charlottes.
For the charlotte:
- one box of ladyfinger biscuits (42 biscuits)
- 600 g of chestnut cream
- 200 g of walnut halves
- 400 g of soft butter
- 200 g of sugar
For the syrup:
- 20 cl of water
- 60 g of sugar
- 2 tablespoons of whisky
For the decoration:
- custard
- some walnut halves
- pieces of candied chestnut
Preparation
1) Prepare a syrup by bringing the water and sugar to a boil. Let it cool before adding the whiskey. Set aside.
2) Prepare the filling for the chestnut charlotte. Coarsely chop the walnuts. Work the softened butter into a cream with the sugar, then add the walnut pieces. Incorporate the chestnut cream.
Editing
To present this chestnut charlotte, you can use a Tupperware-type charlotte mold or small individual ramekins. In the latter case, butter the bottom of the ramekins to facilitate unmolding.
1) Dip the ladyfinger biscuits in the syrup and line the edges of the charlotte mold or ramekins (cutting them to three-quarters of their length).
2) Place a layer of cream at the bottom of the mold, then a layer of soaked biscuits. Add another layer of cream and finish with a layer of biscuits.
3) Chill the charlotte for at least 3 hours before unmolding.
Note: If you used ramekins, place them in a hot water bath for a few moments to facilitate unmolding.
4) Serve this charlotte with custard, after decorating the top with broken pieces of candied chestnut and walnut halves.
