Chocolate Sponge Cake: A Recipe To Share

Ingredients
Here are the ingredients needed to make a chocolate sponge cake for 2 people:
3 eggs
35 g of sugar
1 tablespoon of unsweetened cocoa
100 g of dark pastry chocolate
35 g of butter at room temperature
Preparation
1- Break the whole eggs into a container.
2- Whisk the eggs with the sugar until the mixture foams and turns white.

3- Add the cocoa, sifting it to avoid lumps and mix well.

4- Break the chocolate into a bowl and place it on a double boiler.
5- Melt the chocolate over low heat until it is smooth and shiny.

6- Off the heat, add the chopped butter to the still hot melted chocolate.
7- Mix vigorously until you obtain a smooth chocolate cream.

8- To finish the batter for your chocolate sponge cake, fold the melted chocolate into the egg mixture.
To note: during this step of the recipe, make sure to mix well with a whisk so that the cake batter is perfectly homogeneous.

Cooking
Baking is the key to making your chocolate sponge cake truly successful, with a melt-in-the-mouth texture.
1- Preheat your oven to 180°C.
2- There is no need to butter the pan since you will be eating this sponge cake without unmolding it.
3- Pour the batter into a small ovenproof dish, so that it is 4 cm thick.

To note: the shape of the dish and the thickness of the dough are also important for this chocolate fondant to have the ideal texture.
4- Bake this Chocolate cake 12 minutes very exactly.
The edges of the cake will start to cook but the center should remain slightly raw.
