Prune Stew: An Auvergne Recipe.
Typical regional specialty of Auvergne, pachade is a kind of large pancake to share. Usually garnished with apples or prunes, it is easy and quick to prepare as it is cooked in a pan. We offer you to discover a very simple recipe for pachade with prunes.
Ingredients
Here are the necessary ingredients to prepare a prune pachade for 4 people:
20 pitted prunes
1 tablespoon of amber rum
2 eggs
80 g of sugar
1 pinch of salt
100 g of flour
½ packet of baking powder
20 g of melted butter
10 cl of milk
a knob of butter for cooking
icing sugar for decoration
Preparing prunes.
To prepare prune pachade, start by soaking the prunes in a mixture of water and rum.
1- If your prunes are not pitted, remove the pits before placing them in a bowl.
2- Add the rum and cover the prunes with boiling water.
3- Let the prunes soak for about an hour, then drain them carefully.
Preparation of the dough.
The dough of the prune pachade is similar to that of a clafoutis, although its texture is thicker.
1- Whisk whole eggs with sugar and a pinch of salt.
2- Gradually incorporate sifted flour and baking powder, whisking well to avoid lumps.
3- Melt the butter and let it cool before adding it.
4- Finally, dilute the dough with milk.
Cooking of the pachade.
The peculiarity of pachade is its frying in a pan. It's a very practical cake recipe when you don't want to turn on the oven!
1- Melt a generous knob of butter in a non-stick pan over medium heat, then pour the batter into the pan.
2- Spread the drained prunes over the entire surface of the cake and lower the heat.
3- Cover the pan and let it cook over low heat for about 10 minutes.
4- When the bottom of the cake is well set, flip it over like an omelet using a plate.
5- Put the prune pachade back in the pan and cook the other side for about 5 minutes.
Note: Watch the color of the batter carefully by delicately lifting the pachade with a wooden spatula.
Tasting tips.
Let the prune stew cool down before tasting it. Just before serving, sprinkle this delicious Auvergne cake with a veil of powdered sugar. Enjoy your meal!
