Strawberry Charlotte Recipe
The strawberry charlotte recipe is a classic spring dessert. Whether their filling is traditional or more original, charlottes, which are prepared the day before, always make a big impression.
Ingredients
The ingredients needed to make this strawberry charlotte recipe for 6 people are:
- 500 g of strawberries
- 1 packet of vanilla sugar
- 250 g of cottage cheese
- 2 egg whites
- 100 g of sugar
- 2 sheets of gelatin
- the juice of one lemon
- 30 ladyfinger biscuits
- 5cl of kirsch or another liqueur
- canned whipped cream (optional)
Preparing strawberries
Set aside a few whole beautiful strawberries for decorating this strawberry charlotte recipe. Hull, rinse, and cut the strawberries (into halves or quarters depending on their size). Keep them chilled by seasoning with a packet of vanilla sugar.
Preparation of the cream
Soften the gelatin sheets in a bowl of cold water, then drain them and melt them in the heated lemon juice.
Beat the cream cheese until smooth and add the warm lemon juice containing the gelatin.
Whisk the egg whites until foamy, gradually adding the sugar to make a meringue.
Gently fold the meringue into the cream cheese and add the strawberries.
If the strawberries have released juice with the vanilla sugar, you can reserve this juice for the next step of the strawberry charlotte recipe.

Pour the kirsch into a shallow Dish and dilute it with 5 cl of water or with the strawberry juice. If you are making this strawberry charlotte recipe for children, you can replace the alcohol with the juice of an Orange or with a bit of diluted Strawberry syrup or grenadine in water (be careful not to add too much as the ladyfinger Biscuits are already quite sweet). Dip the ladyfinger Biscuits so they are well-soaked but do not break, and line the bottom and sides of your charlotte mold, rounded side against the mold. Unmolding will not be an issue if you have an airtight mold like a "Tupperware". If not, it is recommended to line the mold with parchment paper. Fill the mold with the strawberry cream. If you have enough biscuits left, it's possible to create an intermediate layer of soaked Biscuits (keeping in mind that you will also need some to make the base of the charlotte). Cover everything with Biscuits and close your mold with its lid (for an airtight mold) or with a Plate on which you will place some weight (if you have a glass mold like a soufflé dish).
Rest time and decoration
Let the charlotte set in the refrigerator for at least 12 hours. This strawberry charlotte recipe should be unmolded at the time of serving. Decorate it as you wish with the reserved strawberries and small rosettes of whipped cream.
