Strawberry Mint Soup: A Light Summer Dessert

Strawberry mint soup is a dessert that is both light and very easy to make. It can be prepared in no time with seasonal ingredients, highlighting the raw flavor of perfectly ripe strawberries and fresh mint. This summer-flavored dessert is perfect for aiding digestion at the end of a hearty meal, especially if you serve it with a scoop of lemon sorbet.

Ingredients

Here are the ingredients needed to prepare strawberry mint soup for 4 people:

500 g of strawberries.
1 small bunch of fresh mint.
2 sachets of vanilla sugar.
½ lemon.
500 ml of lemon sorbet.

Preparation of the mint

The strawberry mint soup owes its refreshing taste to the use of finely chopped fresh mint. This aromatic herb pairs very well with strawberries and lemon sorbet, which make up this light and summery dessert.

1- Wash and dry the bunch of mint.

2- Select about 10 beautiful mint leaves.

3- Finely chop the mint leaves with a knife or kitchen scissors.

Preparation of strawberries

To prepare this strawberry mint soup, I recommend using a blender or a simple mixer.

1- Rinse the strawberries without hulling them to avoid soaking the fruits too much.

2- Hull the strawberries and cut them in half or quarters depending on their size.

3- Pour the strawberry pieces into the bowl of a blender and add the vanilla sugar.

4- Squeeze the half lemon and add the lemon juice.

Preparation of Strawberry Soup

Once you have gathered all the ingredients, preparing the strawberry mint soup is very simple.

1- Quickly blend the strawberries, without overdoing it, so that the texture of the fruit soup is not too liquid. It is nice to find small pieces of strawberries in this dessert.

Note: If you prefer your fruit soup to have a thicker consistency with even more strawberry pieces, you can also crush the strawberries with a fork along with the vanilla sugar and lemon juice.

2- Divide the preparation into 4 glass verrines.

3- Sprinkle the verrines with chopped mint and refrigerate for at least 2 hours.

Tasting tips

Serve the strawberry mint soup well chilled.

To make this dessert even more indulgent, refreshing, and digestible, I recommend serving it with a scoop of lemon sorbet.

With the addition of the lemon sorbet, this summer dessert takes on the qualities of a "trou normand" or a strawberry mojito... but without alcohol, of course!
