The Cheesecake With Almonds: An Easy Recipe

Are you looking for an easy and delicious recipe to use up a lingering pot of fromage blanc in your refrigerator? Make a fromage blanc and almond cake! This moist cake with the delightful taste of financier is perfect for breakfast or a snack.

Ingredients

Here are the ingredients needed to prepare a cheesecake with almonds for 4 people:

3 eggs.
75 g of brown sugar.
150 g of cottage cheese.
150 g of almond powder.
35 g of flour.
½ packet of baking powder.
1 tablespoon of olive oil.
A knob of butter for the mold.
2 tablespoons of sliced almonds for decoration.
A pinch of granulated sugar.

Cake batter preparation

The preparation of the quark and almond cake is very simple and quick.

1- Whisk the whole eggs with the brown sugar until the mixture is frothy.

2- Add the quark and mix well.

3- Gradually incorporate the dry ingredients, namely the almond powder, flour, and baking powder.

4- When the mixture is smooth, add the tablespoon of olive oil last and mix well.

Note: In this recipe, the use of quark helps reduce the amount of oil used. Additionally, the addition of almond powder provides a perfect texture to the batter and makes the cake deliciously moist.

Cake finishes

1- Butter a cake tin.

2- Pour the cake batter into the tin and smooth the surface.

3- For extra indulgence, sprinkle the top of the cake with fromage blanc and almonds with 2 tablespoons of sliced almonds and a pinch of sugar.

Note: if you want to flavor this cake, you can replace the pinch of sugar with a packet of vanilla sugar. You can also mix the pinch of sugar with a pinch of ground cinnamon, as we do in the carrot cake recipe and some apple cakes.

Baking the cake

1- Preheat your oven to 180°C.

2- Bake the cake with cottage cheese and almonds for 40 minutes.

3- During baking, monitor the color of the cake to ensure the almonds do not burn. If your oven is powerful, you can protect the top of the cake with a sheet of aluminum foil.

4- Once out of the oven, let the cake cool in its mold before removing it.

Tasting tips

This cake with cottage cheese and almonds is delicious with tea or coffee. Thanks to the use of almond powder in the batter, this moist cake has a nice almond flavor, similar to a lighter financier. You can enhance its taste by adding one to two teaspoons of bitter almond extract.

To prepare a cake with Mediterranean flavors, you can also flavor the cake batter with lemon or orange zest or with two teaspoons of orange blossom water.
