The Chocolate Tangerine King Cake: A Vegan Recipe
If you are looking for an original and/or vegan version of the traditional galette des rois, try this recipe. The chocolate tangerine galette des rois is prepared without animal ingredients and is a treat for all gourmets.
Ingredients
Here are the ingredients needed to make Chocolate tangerine galette des rois for 6 to 8 people:
2 rolls of puff pastry
6 mandarins
2 packets of vanilla sugar
150 g dark Chocolate for baking
75 ml almond milk
100 g almond powder
pinch of salt
a pinch of cinnamon
2 tablespoons maple syrup
Preparation of the compote
To garnish this Chocolate tangerine galette des rois, we start by preparing a tangerine compote.
1- Peel the mandarins without detaching the segments but removing as many white filaments as possible.
2- Using a serrated knife, slice the mandarins in a pan.

3- Add the vanilla sugar and stew over low heat for about 15 minutes.

4- Let this mandarin compote cool before blending in a food processor or with an immersion blender.
Preparation of the filling
1- Break the chocolate into pieces in a saucepan. Add the almond milk and melt the chocolate over very low heat, stirring constantly.
2- When the chocolate is melted, add the almond powder, the pinch of salt and the pinch of cinnamon and mix well.
3- To finish the filling of your chocolate mandarin galette des rois, add the mandarin compote to the preparation.

Assembly of the cake
1- Unroll a disk of puff pastry on a baking sheet.
2- Cover the pastry with the chocolate and mandarin filling, leaving a 2 cm margin all around the cake and add a bean.

3- Cover the filling with the second disc of puff pastry. Seal the edges by pressing down with your fingertips and pricking the pastry with the back of a knife blade.
Note: chiquetering is making small, even, slanted cuts on the edge of the galette.
4- Using a kitchen brush, gild the top of the chocolate mandarin galette des rois with a little maple syrup.
Cooking
1- Preheat your oven to 180°C.
2- Meanwhile, draw patterns on the top of the cake with the tip of a knife.
