The Chocolate Tonka Mousse: An Easy Recipe
As all chocolate lovers know, there is nothing better than a homemade chocolate mousse! Today, we suggest you revisit this great classic with a spice that is very much in vogue right now. Here is the recipe for chocolate tonka mousse.
Ingredients
Here are ingredients needed to make chocolate tonka mousse for 4 people:
150 g of dark pastry chocolate
3 tablespoons of hazelnut milk
half a tonka bean
2 large eggs
a pinch of salt
Note:in the absence of tonka bean, you can replace this spice with half a teaspoon of bitter almond flavoring.
Preparation
To prepare this chocolate tonka mousse, we start by melting the chocolate in a bain-marie.
1- Break the chocolate into a heatproof container and add the hazelnut milk.

2- Place the container on a double boiler and let it heat over low heat until the chocolate is perfectly melted.

3- When the chocolate becomes smooth and shiny, turn off the heat. Remove from heat and add the grated half tonka bean.

4- Separate the eggs. For this recipe, I only used the egg whites.
To note: keep the yolks to incorporate them into a quiche or a flan, for example.
5- Whisk the egg whites very stiff with the pinch of salt.

6- Fold the egg whites into the melted chocolate, using a soft maryse to avoid breaking them.

7- Divide the preparation between 4 small ramekins. Place the chocolate mousses in the refrigerator for at least 4 hours.

Tasting advice
Remove the chocolate mousses from the refrigerator 15 minutes before serving.
