The Thin Apple Pie: An Easy Recipe.

Apple pie is a classic that everyone loves. There are countless variations, with shortcrust, sandy or puff pastry, with or without cream. If you are looking for a very easy and quick recipe to prepare, try the thin apple tart! This dessert can be prepared in no time with only 4 ingredients. It requires little effort but makes a big impression.

Ingredients

Here are the necessary ingredients to prepare a thin apple tart for 4 people:

3 or 4 two-tone apples.
One roll of puff pastry.
2 to 3 tablespoons of apricot jam.
1 packet of vanilla sugar.

Cutting apples

In order to garnish the apple tart, I advise you to cut the apples into very thin slices. This will allow the apples to cook in the oven in just 25 to 30 minutes.

1- Peel the apples.

2- Cut them into quarters and remove the core and seeds.

3- Cut each quarter into very thin slices, only 2 to 3 mm thick.

Preparing the dough

The thin apple tart is very quick to prepare using store-bought puff pastry. Choose preferably all-butter puff pastry and take it out of the refrigerator at the last moment so that it is nice and cold and easier to handle.

The special feature of thin tarts is that they do not have edges. Therefore, you do not need a pie dish or any other tart mold to prepare this apple tart.

1- Unroll the round puff pastry onto a baking sheet while keeping the parchment paper.

2- Handle the pastry delicately to avoid deforming it and to obtain a thin tart with a nice round shape.

3- Prick the tart base with a fork, making holes all over the puff pastry, including towards the edges of the tart.

Note: This tip helps prevent the pastry from puffing up too much and deforming during baking. It also helps make the thin tart even crispier.

Adding jam

Thin tarts have the additional characteristic of being devoid of cream between the pastry and the fruit filling.

In this apple thin tart recipe, I used apricot jam to ensure the bond between the pastry and the fruit and to enhance the flavor of the tart.

Evenly spread two to three tablespoons of apricot jam on the round puff pastry. You can use homemade jam or store-bought.

Note: in this recipe, you can substitute apricot jam with quince or apple jelly.

Assembling the apple pie

Even though this apple tart is quite quick to make, assembling the tart is the longest step. You need to be meticulous if you want to achieve a beautiful visual.

1- Arrange the apple slices on top of the jam, slightly overlapping them, in order to form a tight and regular rosace.

2- Start from the edge of the tart and continue to cover the dough with apples, moving towards the center. Don't hesitate to tightly pack the apple slices: the filling should be generous with fruits.

3- Finally, sprinkle the tart with vanilla sugar before baking it.

Baking the pie

1- Preheat your oven to 190°C.

2- Bake the apple tart for 25 to 30 minutes until the pastry becomes golden and crispy.

Tasting advice

The thin apple tart is delicious with its crispy crust and generous fruit filling. It is even better served with a scoop of vanilla ice cream and a sprinkle of powdered cinnamon.
