Ingredients
- - 200 g of quality dark chocolate
- - 4 fresh eggs
- - 1 pinch of salt
- - 1 tablespoon of sugar (optional, to taste)
Preparation
1. In a bowl, break the chocolate into pieces.
2. Cover it with very hot water, cover the bowl, and let it sit for 10 minutes.
3. Separate the egg whites from the yolks into different containers.
4. Empty the water from the bowl containing the chocolate. The chocolate should have melted; mix it with a fork until you achieve a smooth texture.
5. Incorporate the melted chocolate into the egg yolks and mix well.
6. Add a pinch of salt to the egg whites, then beat them with an electric mixer until stiff peaks form.
7. Using a wooden spatula, slowly and gently fold the egg whites into the chocolate/yolk mixture, being careful not to break the whites.
8. Place everything in the refrigerator for about 3 hours.
