Ingredients
- - 320 g of fresh raspberries
- - 36 ladyfingers
- - 3 eggs
- - 125 g of white sugar
- - 50 g of flour
- - 1/3 liter of whole milk
- - 1/2 vanilla bean
- - 1 packet of vanilla sugar
- - A coffee bowl filled with water
Preparation
1. Making the pastry cream:
In a mixing bowl, combine 3 egg yolks, flour, and sugar. Bring the milk to a boil with the split vanilla bean, then gradually incorporate it into the previous mixture while stirring vigorously.
2. Return everything to the saucepan over low heat and stir with a wooden spatula until the cream thickens. Be attentive, as it may curdle if not mixed well enough.
3. Once the cream coats the spatula, remove it from the heat and let it cool completely.
4. In a bowl, combine 50 g of sugar and the packet of vanilla sugar, then mix them with the water to create a syrup.
5. Quickly dip the ladyfingers in this syrup before arranging them in a charlotte mold.
6. Layer a first layer of pastry cream, followed by a layer of raspberries (washed and drained beforehand), then another layer of ladyfingers. Repeat these steps until all ingredients are used up.
7. Finish with a layer of ladyfingers to ensure the charlotte holds its shape well.
8. Place a large plate on top of your mold and carefully invert it, then let it rest in the refrigerator for at least twelve hours.
9. Unmold the charlotte and savor every bite.
