Smoked Salmon and Fresh Salmon Potato Gratin

Ingredients

  • - 150 g smoked salmon
  • - 200 g fresh salmon fillet
  • - 200 g potatoes
  • - 3 eggs
  • - 20 cl thick cream
  • - 15 cl whole milk
  • - 100 g grated gruyère cheese
  • - salt, pepper and nutmeg to taste

Preparation


1. Preheat your oven to 210°C (gas mark 7).

2. Steam the whole fresh salmon (skin side down) along with the thinly sliced potatoes (5 mm thick). If you don’t have a steamer, plunge them into boiling water for 10 minutes.

3. Meanwhile, cut the smoked salmon into small pieces and distribute them at the bottom of a cake pan (preferably a silicone mold or line it with parchment paper).
4. Prepare the mixture by beating the eggs with the cream, milk, a little salt (consider the smoked salmon which is already salty), pepper, and nutmeg.

5. Once the fresh salmon is cooked (it should remain slightly pink inside), cut it into pieces (without the skin) and place them in the dish, also adding the potatoes.
6. Pour the mixture over and sprinkle with grated cheese.
7. Bake for 25 to 30 minutes until the top is nicely golden.
