Ingredients

  • - 2 small shallots
  • - 12 cl of dry white wine
  • - 15 cl of liquid cream
  • - 180 g of unsalted butter
  • - salt and pepper to taste

Preparation

2) In a saucepan, reduce the white wine with the chopped shallots until almost all the liquid has evaporated.

3) Incorporate the liquid cream and bring the mixture to a boil.

4) Add the butter cut into small pieces while whisking vigorously.

5) Blend the sauce with an immersion blender to achieve a smooth and creamy texture. Adjust the seasoning with a bit of salt and pepper.



Note : Keep this butter sauce warm in a bain-marie, ensuring it does not heat directly to avoid boiling.
