Ingredients
- - 3 zucchinis
- - 2 tablespoons of olive oil
- - Chives and/or chopped parsley according to your preference
- - 4 fresh eggs
- - 200 ml of heavy cream
- - Salt and pepper to taste
- - 10 g of butter for the dish
Preparation
1) Start by thoroughly washing the zucchinis, then slice them into thin rounds.
2) In a skillet, heat the olive oil and sauté the zucchini slices. Add salt, pepper, and chopped chives and/or parsley. Cover the skillet and cook for about 10 minutes, stirring occasionally.
3) Meanwhile, crack the eggs into a bowl and beat them. Incorporate the heavy cream while mixing well, then season with salt and pepper.
Note: For added indulgence, you can add grated cheese to this mixture.
4) Fold the cooked zucchini into the beaten eggs.
5) Butter an ovenproof dish. Pour in the mixture and bake your zucchini flan for about 30 minutes at 180°C (Th.6).
