  • - 18 large scallops
  • - 50 g of unsalted butter
  • - 2 tablespoons of leveled flour
  • - a small glass of white porto
  • - 200 g of heavy cream
  • - chopped fresh parsley
  • - salt and pepper to taste
  • - grated Gruyère cheese

Preparation

1) Start by washing and drying the scallops well.

2) In a skillet, melt the butter, then add the scallops, sautéing them quickly.

3) Once golden, sprinkle them with flour and cook for one minute before adding the porto and cream. Season with salt, pepper, and the chopped parsley.

4) Let it simmer on low heat, covered, for 3 to 4 minutes.

5) Gently distribute this mixture into 6 empty scallop shells or 6 ramekins.
6) Finish by sprinkling the shells with grated Gruyère and broil in the oven for about 10 minutes.
